Borned in Béziers, Thierry Vaissière was marked from childhood by the joyful atmosphere of the dinners organized by his family. “The food for me was intimately tied to giving people happiness.” It is therefore quite natural that he is heading towards the catering trade. Discovering very early gastronomy, the young man who discovers a whole other universe, pressed he gets his CAP, BEP, BAC Pro from cook by learning.
The young chef goes to Paris to perfect himself and integrates the kitchens of Alain Senderens. The three-star chef of the Lucas Carton, then considered one of the best chefs in the world. Thierry Vaissière will keep the love of fine seasonal products and the precision of the gesture, and very subtle blends of flavors.
He then integrated the kitchens of Drouant and the prestigious Tour d’Argent both equally starred. Later having acquired one of the most solid experiences, it flew for the opening of Paris Las Vegas Resort Hotel.
Then, for love of Mediterranean cuisine, he then joined the Pourcel Brothers three stars at the Jardins des Sens to take over the Maison Blanche in Paris.
After 10 years of work and having been elected “Best Business Table in the World” by the American magazine Forbes, he decided on this challenger and to take over the kitchens of Sofitel Paris le Faubourg.The chef is renowned for his South-inspired cuisine that pushes the boundaries of culinary traditions. Everything is food for thought, his encounter gives him total freedom of creativity.
Today our chef is at the head of the kitchens, one of the most secret and beautiful Maison de Paris, in the heart of the Saint Germain district, in a chic and green setting, the Maison de l’Amérique Latine.
Having participated in the 2008 MB Fès restaurant, Thierry Vaissière is still the chef of this most modern restaurant in Morocco.
Thierry Vaissière is a creator of new flavors and sensations that gives no limit to the creation with as a garden the great Mediterranean rim.
