Son of restaurateurs installed in La Mongie (Hautes-Pyrénées), it is only 20 years when it decides to open in 2002 its own restaurant and to install it in an old sheepfold of the 16th in the heart of the Var. He takes charge of the furnaces while his wife Geraldine will take that of the service and the cellar. The Relais, which once served as a canteen for monks, then became a sheep-fold, resumed its life and was quickly noticed and distinguished. He obtained a star in the Michelin Guide in 2013, becoming one of the outstanding Châteaux & Hôtels Collection Tables in 2005. At the end of March 2014 Sébastien Sanjou was inducted as Maitre Cuisinier de France.
