Johan Leclerre, from La Rochelle, is a grandson and son of a fisherman. From fisherman’s cook-sailor. These men who are at the same time to the furnace and to maneuver when the fish commands it. Then, the family reunion with the return of the fishing campaigns was always a good opportunity to share the “godaille”, the part of the fisherman. For Johan, the vocation of cook was born thus, in those moments of sharing where the family was finally complete. He then began his gastronomic journey, working with Gérard Cagna, Pierre Gagnaire, Jean-Michel and Michel Lorain, Pierre and Michel Troigros, and then Louis XII by Alain Ducasse.
In 1998 he settled in Aytré Plage, where he built a complex: La Maison des Mouettes, consisting of a luxury hotel, a gastronomic restaurant and a bistro: the Original Version. In 2007, it opens its second bistro “Le Café du Parc”, in 2010 Storm Xynthia will force it to leave La Maison des Mouettes following a prefectoral order, the site is classified as a zone of great danger. After this loss, Stéphanie & Johan relocate to the heart of the historic district of La Rochelle, at the foot of the two towers, Place de la Chaine. They will name this new restaurant “La Suite”. It is a concept “Gastronomy accessible to All”. They make this place a unique place on La Rochelle, from a historic place, they will add a felted contemporary decoration, added to that from the heights under stunning ceilings, from the private lounges to the smoking lounge, the place allows the customers to go From discovery to discovery. A champagne bar illuminates the entire entrance, the metal serves as a border with the Espace Coursive, a private room full of color overlooking the old port.
In 2007, Johan obtained the distinction of Meilleur Ouvrier de France.
