Style : French Gatronomy inspired by the soul of the North
Originally from Picardy, Nicolas Gautier discovers his vocation as a cook at the age of 15yo, influenced by a dad in the kitchen and a mom in the dining room. He obtained a CAP cuisine at the Château de Fere in Tardenois, then joined the “Bristol” in Paris with Michel Del Burgo for 1 year; a small come back in the Aisne for a BEP server during 1 year in a small family restaurant. Then he met his future wife and they decide to leave for Switzerland for 2 years to the hotel Moevempick Group in Geneva, before returning to France.
The young Chef helped his suffering father and then bought the family restaurant. He obtained the young talent Picardie Gault and Millau award, he sold his business after 5 years to join the kitchens of the Château d'Esclimont where he will be the Executive Chef for 2 years and where he will once again win the title of young talent Gault And Millau for the Center region.
He is also dedicated to the project “Baladovore“, of which he is the founder, an application that honors the best producers of each French region.
For two years now, Nicolas has taken up a new challenge at “La Laiterie“. At the heart of this renowned Lillois star establishment, it is constantly renewing itself to offer an original cuisine every day, based on local products. Today, Nicolas Gautier takes full inspiration from the soul of the Flanders region to propose his contemporary and audacious vision of the cuisine of the North.
