A graduate of the Paris hotel school in 2000, Edouard Mignot continued his training at the homeworkers’ colleges as well as on the side of the biggest. He began his studies at the Foreign Ministry at the Grand Hôtel Intercontinental in Paris before joining Philippe Rochat, a three-star chef, as a half-chef. Then, in 2005, he joined the Régis Marcon restaurant, Bocuse d’Or – 3 Michelin stars in Saint-Bonnet-le-Froid, where he spent three years as a half-Chef in the kitchen. The chef then joined Chef Eric Pras to assist him in the renowned and three-star Maison Lameloise in Chagny.
In 2011, Edouard Mignot won the second edition of the Toqueshow, revealing competition of young talents organized by Brake and the Toques Blanches Lyonnaises. Before realizing his dream at the age of 31: the opening of his own establishment, the Edem, with his wife Emilie, in July 2013.
