Style : French gastronomy with heart and sensibility
I grew up in a happy family where the whole life of the house was organized around a big round table. Dinners were never very complicated, but always built with vegetables from the garden, meat from the butcher, and the desire to do well. I think my mother passed on the taste of truth, and as a form of generous simplicity. Small, I dreamed of 1000 trades; firefighter, veterinarian, adventurer, draftsman. And to respect the family tradition I started pharmacy studies, before going to the obvious; what makes me vibrate goes elsewhere …
Quickly, I find myself on the school benches Ferrandi in Paris, where I learn the basics. The “sauces mères”, the puff pastries, the “soufflés” and the “béchamel”. Then the kitchens of restaurants. The big bath. My first boss Mark Singer takes me under his wing and little by little, I find my place in the brigades that follow one another. Maison de l’Aubrac, Maison Prunier, Plaza Athénée … doors open and I find myself working for the biggest names: Alain Ducasse, Jean-Francois Trap, Yannick Alleno, Éric Fréchon … Beyond the know-how, they transmitted to me their passion, their sensitivity, their inspiration … and each of them is a little present in the plates that I am doing today.
I am often asked to describe my cooking, to define my “style” and I think there is nothing more complicated. My roots are French, and I let myself be carried to the liking of what surrounds me, of what I like. My cooking is a reflection of who I am: simple, spontaneous, sincere. It expresses itself differently according to circumstances and desires, but never without losing sight of greed and generosity.
Since this is the ultimate purpose: pleasure and sharing.
